Poached Pear Tequila Spritz

  1. In a cocktail shaker add ice, tequila, pear juice, ginger simple syrup, and sage leaves.

  2. Shake for 30 seconds.

  3. Double strain into cocktail glass with ice.

  4. Top with Club Soda.

 

*POACHED PEAR JUICE

  • Zest of 1 Lemon

  • 2 Cinnamon Sticks, broken in half

  • 1/4 Tsp Ground Allspice

  • 1/4 Cup Brown Sugar

  • 3 Cups Apple Cider

  • 1 Cup Water

  • 4-5 Pears (with stems), peeled and cored from bottom

In a large saucepan, add lemon zest, cinnamon stick, allspice, brown sugar, apple cider, and water. Cover pears with wax paper to prevent discoloration or pour a little lemon juice over the pears. Add pears to the saucepan and bring to a simmer. Cook, turning pears occasionally, about 20 minutes. Remove pears from liquid; transfer to a large bowl. Use poached pears as you’d like. Take the poached pear juice in the saucepan, transfer to the desired glass and use for the cocktail.
